Marshawn Lynch partners with celebrity chef Alvin Cailan on new ‘Beastmode Burger’ pop-up - San Francisco Chronicle

Marshawn Lynch might be having more fun as an Emeryville restaurant owner than he did during his final days as a professional football player last year.

It’s evident in the recent happenings at Rob Ben’s, the colorful soul food spot Lynch opened in 2018. Two months after filming an episode of Paramount Network’s reality TV show “Bar Rescue,” Lynch is collaborating with celebrity chef Alvin Cailan to add a new burger to his menu for a limited time. The burger is based on a recent episode of Cailan’s “The Burger Show,” a popular food-focused web series, in which Lynch appeared. (See the full episode here).

The burger is called the “Beastmode Burger.” It’s inspired by the idea of eating hot wings, said Cailan, the bi-coastal chef-restaurteur behind Egg Slut and other restaurants. It comes with bacon cooked with Krystal’s hot sauce, a Southern staple that Lynch also enjoys. The ciabatta bun is smeared with ranch dressing and stuffed with diced and pickled jalapeños, cauliflower and carrots.

The burger will be available for $15 on Dec. 14 at 4 p.m. at Rob Ben’s, as well as Dec. 15 at the Oakland Coliseum ahead of the game between the Oakland Raiders and Jacksonville Jaguars, in Tailgate C-Lot.

Cailan created the burger in October when Lynch appeared on an episode of “The Burger Show.” At the time, they joked it would appear on the Rob Ben’s menu but after discussing it more off-camera, they decided it would be a good idea.

“It’s definitely out of my realm to make a burger so crazy, but we were having fun,” Cailan told The Chronicle. “The last few years, my heart is more in cooking just fun, comfortable food. This kind of came together through that.”

All it took was one bite for Lynch to think the burger could have a home on the Rob Ben’s menu.

“It’s not a Marshawn Burger, it’s a Beastmode Burger. This bacon dipped in the buffalo wing sauce hella slaps. The bun is brioche or something fancy like that and the meat is some special beef patty that (Alvin) came up with,” said Lynch. “It really is just the perfect combination of ingredients. It’s got some kick but it’s not so hot your can’t taste nothing. There’s a nice balance between the pickled things, the ranch dressing, that bacon and the patty.”

Cailan said what has surprised him most about working with Lynch is the former NFL player’s discerning palate. Though he often delivers his opinions in a comedic fashion — on the show, for example, he said a burger topped with truffles tasted like “old couch cushions” — Cailan said Lynch has a sophisticated, truthful perspective on flavors.

“Watching him discern those flavors is just really interesting,” Cailan said. “It’s also hilarious because he’s Marshawn, so he just says what he wants. It means a lot when he said he likes the burger we’re doing.”

While he is excited about the burger pop-up is notable and having Cailan cook at the restaurant over the coming weekend, Lynch said he’s also enjoying seeing the growth of other areas of the Rob Ben’s menu. He said the barbecues every Tuesday at the restaurant are going well, and the gumbo on Fridays from his “Auntie Shawny,” who helps him run the business, and oxtails on some Sundays from his “Auntie Kecia” who created much of the menu, are some of the restaurant’s more popular items.
