Why You Shouldn't Get Lettuce and Tomato on Your Bar Burger - InsideHook

If you’re ordering a burger at a bar, you’re probably not — in that specific moment, at least — concerned about staying healthy or getting your daily allowance of fruits and vegetables. And as Eater’s Madeleine Davies argues, that’s all the more reason to skip the lettuce and tomato entirely.

In her piece aptly titled “Skip the Lettuce and Tomato on Your Bar Burger,” Davies points out that the quality of produce at most bars is such that you’re going to be getting limp, wilted lettuce and less-than-ripe tomatoes. “At least seven out of 10 times, I can guarantee you that the produce you’re getting will not elevate the culinary experience and you’re doomed to face disappointment: the lettuce will be limp and sodden with beef juice; the tomatoes pale and mealy,” she writes. “Add condiments and the already weak flavors of the lettuce and tomato will be wiped out anyway, leaving behind soggy and cellulous dead weight on what would otherwise be an okay-ish sandwich.”

But just because you should skip the lettuce and tomato doesn’t mean you should forgo topping altogether and opt for a plain burger. “Yes, add a fried egg! Add fried onions! Add pickles!” Davies writes. “And duh, add cheese! But note that all of these additions provide something good that isn’t already there — a crunch, a fattiness, a sour or sharp bite. They’re also foods that are almost always good, even when bad, something that can’t be said for lettuce and tomato.”
